Francois Simon was food critic for French newspaper Le Figaro for more than twenty years; he currently hosts the Paris Derniere show on the Paris Premiere television network. Simon has launched a Web site, simonsays.fr, he regularly contributes to publications including Air France magazine and L'Officiel Homme, and he continues to write books devoted to the art of living well. For Assouline, Simon has also written The Provence of Alain Ducasse (2001), Paris Hotel Stories (2003), Toscane(s) (2004), Jean-Paul Hevin (2007), and Cuisine & Cravings of the Stars (2008). A stratigrapher, historian, writer, and poet, Pascal Payen-Appenzeller has a passion for the piano as well as for contemporary art, of which he is also a collector and a critic. He is the author of numerous books on Paris, including the first encyclopedia on the city, Champs-Elysees: dictionnaire historique, architectural et culturel, 1er tome (Gourcuff Gradenigo, 2013), as well as the original edition of Hotel Plaza Athenee, published by Assouline in 2004 in collaboration with the hotel.
