What sets this cookbook apart from its healthy-cooking competitors is the relative ease of recipe preparation and a pronounced emphasis on a wide variety of whole grains, vegetables, and soy products, many of which may be unfamiliar to mainstream cooks. Neither background nor credentials are provided for author Levine; her brief introduction sets basic guidelines for healthy eating: dishes low in fat and sodium, high in unprocessed complex carbohydrates, and adequate in protein. It is left up to the reader to decrease the salt or fat called for or to substitute for his or her own dietary needs or according to what's in the pantry (e.g., egg or egg replacement, hot pepper sauce or cayenne). Each recipe contains a nutritional analysis per serving. Ingredients are listed inconsistently: here butter, there margarine (with its trans fatty acids), eggs versus free-range eggs.
