TOUT HACHE: MEATBALLS - TARTARES - BURGERS Mediterranean Lamb Meatballs Spicy Chicken Meatballs
PREFACE
Three cooking aficionados, Thierry, Lucile and Ahmed, are the brains behind the Cafe Moderne in Paris. There, in their vintage-style restaurant, they gathered together all their culinary know-how and their passion for food. After studying haute cuisine, Thierry came across Ahmed and Lucile, who were heavily influenced by New York street food. When the two of them had returned to France from America, their heads were full of the latest American culinary ideas, including the great American meatball - which turned out to be the same as any traditional meatball. Meatballs are popular, easy to make and are part of the cuisine of almost every country of the world. Often though, they can be pretty basic; think meatballs with tomato sauce and pasta, or the meatballs served up in the cafeterias of a certain well-known Swedish furniture company . .. Inspired by the Cafe Moderne menu, this book sets about restoring the meatball to its former glory, alongside tartares and burgers, which all share a common ancestry. But this isn't the whole story; be prepared for a few surprises along the way. Exciting and exotic combinations of meat, fish and vegetables with spices, herbs and seasonings, lie at the heart of each recipe. And what would a tartare, burger or meatball be without its sauce? This book includes an array of delicious sauces and accompaniments that you can combine with any dish you fancy. Like the Cafe Moderne, the recipes in this book could be described as "Paris and New York's love child. "
