The mulberry belongs to family Moraceae. Mulberry is believed to originated on lower slope of Himalayas and a native of either India or China. The mulberry flower occurs during late winter or beginning of spring. The fruits are sorosis. The fruits have attractive purple to black colour and pleasing flavours. It has also good medicinal properties and can be used to debility symptoms when used with other restoratives. The person who has symptoms such as anemia, dizziness can take a tonic to build up health with mulberry. There are great possibilities to obtaining beverages with highly refreshing, invigorating, thirst quencher and appetizer properties. Therefore, there was urgent need to develop mulberry based processed products and the investigations were undertaken to overcome losses caused by its perishable nature and utilized its nutritive and medicinal value for longer duration.
