The Classic Konkan Cookbook takes the reader on a fascinating journey through the recipes of Narayani V. Nayak, one of the first home cooks to write measurements and methods for dishes from the West Coast of India, using produce so unique to the region. Fruits and vegetables abound, from wood apple to amaranthus, drumsticks to banana flowers, most of which can be found in the Konkan kitchen gardens. Transforming the original, Jyotsna Shahane has added an all-new section on seafood, poultry and meat, with easy-to-follow instructions, realistic quantities and modern techniques to enable even the beginner to get a taste of this colourful and exotic region of India.
