Drying food is an ancient, effective, low-tech way to preserve food from the times of plenty so that it is available during lean times. Using the power of the sun, salt, spices, and perhaps added heat, herbs, fruits, vegetables, and even meat can be preserved by drying. Modern preppers have nothing on our ancestors. Our forefathers (and certainly foremothers) did not have refrigerated freight trucks to transport fresh, canned, or frozen foods to local grocery stores. Collecting and storing food was not "hoarding" or even "prepping." It was simple common sense to preserve and store as much food as possible during the warm summer months.
Drying food is a preservation method that does not require refrigeration, is not as subject to heat and cold as freezing, and does not require expensive and sometimes even dangerous equipment as does pressure canning.
