Synopsis

Cooking well is only part of the profession. Becoming someone a kitchen can rely on requires something more.

How do you respond when you are corrected? How do you stay clear-headed when service becomes intense? When should you focus on your own station, and when should you step in to help someone else? How do you recover from a mistake, recognise what really matters, and prepare yourself for greater responsibility?

In 10 Rules of the Chef in the Modern Era, Cristian Marino shares ten principles shaped by more than twenty-five years in professional kitchens across international hotels, resorts, restaurants and cruise ships.

The rules were not created in theory. They first took shape in the Maldives, where Marino was leading a multicultural kitchen team. What began as short notes pinned near his office became daily points of reference for cooks from different cultures, backgrounds and levels of experience.

The book explores the less visible side of professional cooking: discipline, pressure, teamwork, communication, organisation, judgement, responsibility and leadership.

The ten rules are:

  1. Be Optimistic

  2. Find a Reason to Smile

  3. Forget Yesterday

  4. Plan for Tomorrow

  5. Help Each Other

  6. See the Bigger Picture

  7. Do Not Take It Personally

  8. Be Creative

  9. Be Relevant and Organized

  10. The Chef Is Not Always Right, but Contradicting the Chef Is Unwise

Along the way, the book also addresses the questions that often appear as a cook begins to grow: how to handle pressure, recover after an important mistake, ask for help at the right time, earn respect, know when to speak, and understand when you are ready for more responsibility.

Experiences from Indonesia, life at sea, international hotels and multicultural kitchens in the Maldives show how these principles work when the pressure becomes real.

This is not a cookbook. It is a book about the profession, the people inside it, and the kind of professional you become through the work.

For young cooks entering the profession, for those who want to grow within it, and for chefs beginning to lead others.

Because becoming a chef is not only about cooking better. It is about becoming someone a kitchen can rely on.

From the Inside Flap

Before we embark on the journey through these pages, allow me to reveal how "The 10 Rules of the Chef in the Modern Era " came into being. The journey began in the heart of the Maldives amidst the serene beauty of turquoise waters and white sandy beaches. As an Executive Chef of a large resort, I was at the helm of an incredibly diverse and multinational culinary team. Each chef brought unique flavors, traditions, and experiences from around the world, creating a melting pot of culinary expertise that was as inspiring as it was challenging.

The beauty of the Maldives, combined with the diversity of our team, presented a unique opportunity to blend cultures, techniques, and philosophies in the kitchen. However, it also highlighted the need for a common foundation—a set of guiding principles that could unite us in our pursuit of culinary excellence, regardless of our varied backgrounds.
It was during this time, surrounded by the majestic beauty of the islands and the passionate dedication of my team, that "The 10 Rules of the Chef" was conceived. These rules were not born out of solitude, but from the collective spirit, challenges, and triumphs we faced together. Each rule reflected a lesson learned, a victory celebrated, or a hurdle overcome.
I felt a strong need to share these principles within the confines of our kitchen and as a beacon to anyone who crossed my office, which stood as a gateway to our culinary world. The first iteration of "The 10 Rules of the Chef in the Modern Era " was displayed on a board that hung beside my door. Written not as commandments but as invitations to explore, innovate, and unite under the banner of gastronomy, they served as daily reminders of our shared goals and dreams.
This board became more than just a fixture; it was a source of inspiration and contemplation. Regardless of their role or origin, chefs, sous chefs, line cooks, and kitchen staff would pause, read, and reflect upon these rules. Conversations ignited, ideas were shared, and a more profound sense of community and purpose began to weave through our team. While simple in their wording, the rules were profound in their impact, guiding us through the complexities of managing a large, multicultural kitchen and leading us to unparalleled culinary successes.
As the days turned to months and the months to years, the essence of these rules became deeply embedded in our culinary practices and ethos. They transcended the boundaries of the Maldives, following me and those who had been part of our team to new kitchens, new challenges, and new adventures around the world.
Thus, "The 10 Rules of the Chef" are not just principles; they are the distilled essence of a journey shared by many, conceived in the heart of the Maldives but relevant to global kitchens. They are a testament to the power of diversity, the beauty of collaboration, and the endless pursuit of culinary excellence. As you turn the pages of this book, remember that each rule carries a story, a lesson, and a piece of a more extensive journey—one that I am honored to share with you.
