Dr. Xiaoli Li is Vice Dean and Professor at the College of Biosystems Engineering and Food Science, Zhejiang University, Hangzhou, China. She has served as Principal Investigator of more than 10 national-level and provincial-level projects including three National Natural Science Foundation projects, a national key R&D program project, and a national science and technology support program sub-project, and also serves on a number of committees and editorial boards. Dr. Mostafa Gouda is Assistant Professor at the Nutrition and Food Science Department, National Research Center, Egypt, and is also affiliated with the College of Biosystems Engineering and Food Science, Zhejiang University, Hangzhou, China. He has received a number of awards including the National State Prize in Science and Advanced Sciences, Egypt, 2022/2023 and International Association for Advanced Materials (IAAM) Scientist Medal, Stockholm, Sweden, 2024. He has several publications in high impact journals like Trends in Plant Science, Hazardous Materials, Engineering, Bioresource Technology, and Food Hydrocolloids.
