When cooking teacher Rosbottom (First Impressions, LJ 4/15/92) decided to offer a course on "American Favorites," she wasn't sure how much interest there would be. In fact, it became one of her most popular classes and led to this collection of "spruced-up" classics. She has attempted to cut down on preparation time-and, in some cases, cut down on fat and calories, too-while giving traditional recipes such as meat loaf and macaroni and cheese a new and more contemporary look. Each recipe includes prep/work times, make-ahead and freezing information, and even a seasonal recommendation; Shopping Notes are particularly useful. While some of the recipes are good basic family fare with a twist, many are perfect for easy entertaining: Corn and Wild Rice Soup with Sausage, Salmon Fillets with Ginger and Pepper Butter, and Caramel Peach Pie.
