Artificial intelligence (AI) is a branch of computer science which uses data to create models. These models learn from data and are used to make predictions. Then coverage details the intelligent integration of many technologies for different applications in the food industry for example non-destructive food quality assessment using digital images assisted by chemometrics, simulations to detect the existence of foreign objects in milk packaging using ultrasonic tomography and AI assisted 3D food printing. New advanced sensing technologies, including electronic noses and tongues, are discussed in detail emphasizing their role in ensuring food product quality and safety.
