About the Author
Ralph Felder, M.D., Ph.D. is the director of Cardiac Nutrition at Banner Good Samaritan Medical Center in Phoenix, Arizona, and a member of the faculty of the Department of Nutrition at Arizona State University. Popularly known as "Dr. Chef," Felder is also a graduate of the Culinary Arts program at the Art Institute of Phoenix and has taught healthy-cooking classes and conducted workshops for the Phoenix chapter of the American Heart Association and the American Diabetes Association. Oscar H. Franco, M.D., Ph.D. formerly a researcher at the Erasmus Medical Center (The Department of Public Health, Rotterdam, The Netherlands), is the author of numerous peer-reviewed studies on nutrition and cardiovascular health. He is currently a staff researcher for Unilever in London, England.
