The food industry uses product descriptions like "pure," "organic", and "natural" on its labels to mislead us. Not surprisingly, the industry that makes much of its profits from processing food is hardly in the vanguard of advocating unprocessed food. The industry issues reams of trade journal articles and public relations pamphlets about the harmlessness of food additives and the advantages of using pesticides, preservatives, and dyes, etc. But, while the industry is powerful, it is not omnipotent. It has been unable to completely outflank the advocates of health-and-nutrition-consciousness.
