About the Author
Barb Fitzgerald has over twenty years of experience in the food concession industry. She has successfully designed and managed numerous different concession operations and has served a large assortment of menus at hundreds of events in the Northwest. In addition, she co-chaired a position on the Oregon Food Services Advisory Board, founded Northwest Vendor s Network Association, and has designed and operated a successful espresso café for Portland Oregon s Tri-Met transit system. Many event organizers have sought the advice of this busy professional and she has served as mentor and consultant to countless entrepreneurs starting out in the concession business.
