White Chili
This is one of my most popular recipes and is so easy!
1 pound white beans, washed & sorted
2 boneless, skinless chicken breasts
7 cups water
2 cloves garlic
4 chicken bouillon cubes
2 onions, chopped
2 teaspoons cumin
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
Put beans and chicken in large pot with bouillon cubes and bring to boil. Reduce heat and simmer unti chicken is done, about 20 minutes. Take out chicken and cut up, then put back in pot and add remaining ingredients. Simmer three hours, until beans are tender. Add more water if necessary. To serve, top with fat-free shredded cheddar cheese and chopped green onions.
Serves 6 at 2 fat grams and 296 calories per serving. 21% calcium, 46% iron, 215 mg. sodium, 478 g. carb. 25 g. protein.
