About the Authors
Professor Anderson has been on the faculty of the School of Public Health in the Department of Nutrition since 1972.' Prior teaching positions were held at the University of Illinois, Urbana-Champaign, and Bradford (MA) Junior College.' He has a Bachelor’s degree in History from Williams College, a Master of Arts in Teaching degree from Harvard University, a Masters’degree in Biology from Boston University, and a Doctoral degree in Physical Biology (biochemistry) from Cornell University, Ithaca, NY.' His lifetime research has centered on the linkages among nutrients, hormones, lifestyle factors, and bone health.' He has published several books and written more than 150 scientific articles. In addition, he has taught nutrition courses at both the undergraduate and graduate levels and advanced seminars in Nutrition Topics for doctoral students.' Over the years, he has developed broad interests in healthy eating patterns and the prevention or delay of chronic diseases and co-wrote a book on the Mediterranean Way of Eating.'He and his wife, Elizabeth, have lived in Chapel Hill for over 40 years.' Their three sons live with their families in Gunnison, Colorado, Chapel Hill, and Arlington, Virginia.
Dr. Root worked as a research technician and research support specialist at Cornell University for 22 years after receiving his BS degree from there in Biochemistry.' His MS is in Environmental Toxicology and his Ph.D. is in Nutrition from Cornell.' He spent 12 years with a startup company in Durham North Carolina, BioSignia, Inc., developing statistical models of chronic disease onset for the use by health professionals in communicating risk and preventive strategies.' Since 2008 he has been teaching and doing research at Appalachian State University where he directs the Graduate Program in Nutrition.' His research interests are in the nutrition of vascular diseases and their risk factors.He currently lives in Boone, NC with his wife Constance of over 40 years.' They have 3 children and seven grandchildren.
Dr. Garner worked as a research technician in the Department of Pharmacology at the University of North at Carolina-Chapel Hill (UNC-CH) for 10 years after receiving his BA in Chemistry from the same institution. 'His Ph.D. is in Pharmacology from UNC-CH.' He did a postdoc in the Department of Nutrition at UNC-CH with Dr. Anderson and then continued in the department as a Research Assistant Professor.' He subsequently moved to the Department of Surgery at Duke University for 7 years as a Research Assistant Professor and manager of the Surgical Endocrinology and Oncology Laboratory. 'Since 2000, he has worked as a contractor and program manager in support of the preparation of the Report on Carcinogens for the National Institute of Environmental Health Sciences.He currently lives in Cary, NC with his wife Donna of over 40 years.' They have 1 daughter who also lives in Cary, NC.
