Kidman developed an affinity for Italian food, wine, and culture during his apprenticeship in some of Sydney's most iconic kitchens. His extensive travels in Italy confirmed for him the beauty and generosity of an Italian approach to dining and hospitality. He reinterpreted Italian food to wide acclaim as head chef of Otto Ristorante in Sydney and now combines art with his love of food as executive chef at the National Gallery of Australia and his informal Italian restaurant Dieci e Mezzo.
