Ingredients:
- 1 Tablespoon Olive Oil + Extra for Greasing
- 8 Large Eggs
- 1 lb Sausage
- 2 Cups Spaghetti Squash, Cooked
- ½ Teaspoon Sea Salt, Fine
- ¼ Teaspoon Ground Black Pepper
- 1 Tablespoon Oregano, Fresh & Chopped
- ½ Cup Cheddar Cheese, Shredded
Directions:
- Heat your oven to 375, and grease a 9x13 inch dish with olive oil before setting it aside.
- Add your olive oil to a skillet over medium-high heat.
- Brown your sausage until cooked, which should take about five minutes.
- Whisk together your eggs, squash, and oregano in a bowl. Season with salt and pepper.
- Add your cooked sausage to your egg mix, and then stir until combined. Pour into your casserole.
- Sprinkle your cheese on top, and cover with aluminum foil loosely.
- Bake for a half hour, and then remove your foil baking for another fifteen minutes.
- Let cool before serving.
