Review: Kitchen clods everywhere will be grateful to Polly Clingerman, who has compressed 30 years of culinary experience into one handy reference volume. Her book does include more than 100 recipes. But the meat and potatoes, so to speak, are the hundreds of tips, which will enable you to control an onion's pungency or cook at altitudes over 5,000 feet.
