Willan is the author of the encyclopedic La Varenne Pratique ( LJ 2/15/90) , among many other titles, and the founder of the La Varenne Ecole de Cuisine; the recipes in this collection are in fact like complete cooking lessons. Although the book will primarily appeal to the novice cook, most of the dishes are fairly sophisticated--classic creations from a variety of international cuisines that are suitable for entertaining. Reasonably priced, and a good library item.
