Morris, who has lived in Africa and the Far East, uses her cooking experiences to season dishes with everything in the spice cabinet and then some. Baked trout with rosemary, gingered chicken, Javanese picnic chicken, pork with prunes and veal goulash with herb dumplings present intriguing menu possibilities for diners who must watch their salt intake but want their food to remain flavorful. Morris explains which herbs go well with which foods, as well as where to find certain seasonings and, in a pinch, their substitutes. The recipes are clearly written and give imaginative serving suggestions, especially helpful with such exotic dishes. Recipes note how many milligrams of sodium are contained in each serving.
