(The author) Mrs. Maria A. deCarbia was born in Mexico City of Spanish and French grandparents. She was educated in a French convent and later studied home economics and cooking both in the United States and in Mexico....This is Maria Carbia's book. It expresses her charm and the intangible something that makes this book worth your consideration. At first I was not sure her combination of ingredients would be acceptable to my palate, but while many of the flavors were new to me, I found myself going back for a second taste. Best of all, these recipes are economical, with an interesting quality to them and not just the same old way of extending a pound of meat to feed the multitude. For this alone it should be in your collection of usable cookbooks....Helen Corbin, from the Preface (1961).
