2 C. cottage cheese
1 C. sugar
1/4 tsp. salt
1/2 tsp. baking powder
3 T. butter, melted
3 T. lemon juice
1 T. grated orange rind
3 eggs, beaten
2 T. rice flour
Mix cheese, sugar, flour, salt, baking powder and melted butter. Blend well. Add lemon juice, grated rind and eggs. Beat whole mixture with rotary egg beater for 2 minutes. Pour into unbaked shell. Bake 10 minutes at 400 degrees. Lower heat to 300 and bake 30 minutes.
