Recipes for stuffed mushrooms, a turkey sausage casserole and an orange-flavored angel food cake use such ingredients as defatted chicken stock, fat-free egg substitutes, low-fat cheddar cheese, nonfat yogurt and cottage cheese. Each recipe includes symbols that indicate whether the dish is especially low in sodium, calories or cholesterol; a nutritional analysis; a color photo of the finished dish; and a selection of tips on preparation time, sequencing, variations, suggested accompaniments and microwave options. Although the focus is on fresh ingredients, occasionally frozen or commercially prepared ingredients are called for. For anyone who wants to cook healthfully yet not forgo favorite foods, this collection will prove a reliable guide.
