By now the word prevention on any health-related book has become a seal of approval for consumers. In general, the editor here provides exactly what is expected--straightforward information, good accompanying visuals, and recipes that deliver low-fat, low-calorie portions with flavor. And, occasionally, a taste of ingenuity and innovation creeps in. At the beginning of each of 80 menus (evenly divided among the seasons), the reader can choose a 1,500-, 2,000-, or 2,500-calorie-a-day meal, shown in at-a-glance chart format. Four well-known chefs (Graham Kerr, Diana Shaw, Lora Brody, and Wolfgang Puck) contribute their ideas for three meals and a snack; explanations and nutrition and kitchen notes are thorough and clear. For the most part, dishes reflect ethnic cuisines, with easy-to-cook directions; sometimes, though, the kitchen prep time is too long. Barbara Jacobs
