He stud­ied catering at Broadstairs and was quickly employed by Canterbury's County Hotel, followed by The Grand Hotel in Brighton, and subsequently in France at Le Bistrot de Lyon in Lyons.

Returning home to accept the position of Head Chef at the award winning Lloyds Restaurant in the prestigious city of Canterbury.
