A Cooking Techniques section goes over the purpose and method of every sort of cooking step, such as marinating, larding, salting, pot roasting, barbecuing, and blanching. There is even a beautiful full-color four-page section on garnishing, showing how to make those radish roses, cucumber fans, and many other intricate garnishes.
