This is more or less the printed version of a 1990 video ( LJ 11/15/90) of the same name. Some 48 chefs and other food professionals--Jacques Pepin and Paula Wolfert, among others--offer quick tricks for all sorts of kitchen techniques, along with 40 or so recipes that were not presented on the video. Although it was fun to see this array of talented professionals performing their trucs on video, the book is less successful. Some of the ideas are better understood from a demonstration, while others are not really useful for the home cook (e.g., how to open quail eggs or form the perfect tuna carpaccio). An optional purchase.
