About the Author
Cynthia Mejia is an associate professor and the interim chair of the Department of Foodservice and Lodging Management at the University of Central Florida. She holds a Ph.D. in hospitality administration from Texas Tech University and a master's degree in hospitality management from the University of Nevada, Las Vegas. Dr. Mejia currently teaches one of the first graduate courses in higher education with a specific focus on foodservice supply chains. She has over 20 years of industry experience in F&B and hotel operations management, working for luxury brands in the U.S. and Singapore.
