About the Author

KIT L. YAM, PHD, is Professor and Graduate Program Director of the Department of Food Science at Rutgers University. In this encyclopedia, he brings many years of teaching, research, and consulting experience in packaging to provide a wealth of information and knowledge useful for readers to tackle real-world packaging problems.
