Lee Jackson

Lee Jackson is a former family and consumer sciences teacher (home economics). She has been involved in helping improve the quality of individual and family life through education for over 25 years. Her areas of expertise include food and nutrition, child development, clothing and textiles, and consumer education.

She received her B.S. degree in Home Economics education from the University of Wisconsin-Stout, Menomonie, Wisconsin and her M.S. in education from Northwest Missouri State University, Maryville, Missouri.

Her background in family and consumer sciences provides a rich field of study for work as a writer. With her long-time interest in foods and nutrition, and while living in two prime apple producing states, she wrote three apple cookbooks:

2) Apples, Apples Everywhere - Favorite Recipes From America's Orchards

3) Healthy to the Core: All Natural Low sugar/No Sugar Apple Recipes for Kids

She has authored a textbook that is used for career studies in schools throughout the USA. It is titled: Careers in Focus- Family and Consumer Sciences published by Goodheart-Willcox Publishers.

She has learned that new directions in life can come during retirement and age is not a barrier in pursuing and expanding the work one enjoys.
