About the Author: It's no surprise that Charles 'David' Knight traces his first serious interest in food to television. As a teen he began watching Emeril on the Food Network. His dad, Charles Knight, was resident chef on NBC affiliate WFLA's "Harris & Co." with Jack Harris, and TV Cooking Show Host Chef Tell of "PM Magazine and LIVE with Regis & Kathy Lee" fame lived across the street. Soon, David was mastering the culinary arts. "He was so creative and passionate about it, I began including many of his recipes on my TV appearances and in my cookbooks", his dad says.
When David was asked what he wanted for his 15th birthday, his answer "Cooking School". He received his basic training during the summers attending Peter Kump's Cooking School (the Institute of Culinary Education) in New York City, and earned credits in Nutritional Cuisine from the Culinary Institute of America in Hyde Park, NY, a course designed specifically for experienced professional chefs.
He is a TV Cooking Show Host and author of the bestselling cookbook "Healthy Meat and Potatoes".
His latest cookbook "A Guide to Waterless Cooking for Better Health" was written to compliment his own line of Health Craft Cookware.
