Toby Smithson is the founder of DiabetesEveryDay.com (www.diabeteseveryday.com), a website offering practical, consistent and credible lifestyle support to people with diabetes with weekly menus, educational videos, and more. She is a registered dietitian nutritionist (RDN), a certified diabetes care and education specialist, a former national media spokesperson for both the Academy of Nutrition and Dietetics and the Association of Diabetes Care and Education Specialists. Her professional experiences extend from public health and research to patient counseling, diabetes management devices and media work. Toby was diagnosed with type 1 diabetes in 1968, and her passion for diabetes self-management is reinforced daily by her own good health.
Her media work includes hundreds of print, television, and website interviews. Toby formerly wrote a monthly food column in the food section of the suburban Chicago Daily Herald Newspaper. She has done interviews for both local and national newspapers, magazines, radio, and websites. Media outlet interviews include WebMD, Huffington Post, The Chicago Sun-Times, The Wall Street Journal, Today’s Dietitian, Diabetes Forecast, Diabetic Living Magazine, Weight Watchers Magazine, Prevention Magazine, Every Day Health.com, The Jewish Post, WGN Chicago tv, WTTW PBS tv, and WRLR radio. Lately her focus has been producing diabetes management video of the Diabetes EveryDay YouTube channel.
She moved from the Chicago metropolitan area to coastal South Carolina where she lives with her husband Tony and "her" dog Addie. Toby completed her Master's of Science in Nutrition and Wellness degree at Benedictine University, currently consults on diabetes and nutrition issues, rides her bike, travels and walks the beach.
