Hello, my name is Amanda Rice and I am a holistic nutritionist. I was caught up in the vegetarian lifestyle 8 years ago.

A long time ago I started feeling under the weather for a very long period of time. I would sleep for 8 hours straight and wake up feeling exhausted. I would walk a few stories up the stairs and feel like my heart would jump out of my chest. Basically, I was pretty tired all of the time and couldn't focus on simple tasks. I decided I should skip on the supplements and energy drinks and turn back to nature.

Health care is not only reason why I went vegan. Having emotional attachments with animals is the main part of my decision. I believe that all sentient creatures have a right to life and freedom. I started eating all of the fruits and vegetables that mother earth has given me, and cut of the hormone-filled, cancer-causing milk and dairy. I have never felt better in my life, both physically and emotionally. I love all living creatures on earth and I believe they deserve to roam freely. After 8 years of my vegan, plant-based, colorful journey, I can honestly say that I feel happy every day.

I have always been very rapturous about cooking. Cooking is one of the greatest joys in my life. My goal is to publish books that will allow readers to improve their health through simple everyday ingredients and low fat recipes that make eating delightful.
