Emily Willis

Being an ethnic French, Emily Willis has been driven to cooking for as long as she can remember. She always wanted to make a future as a restaurateur, that's why she took culinary courses together with attending a local school and decided to move from the coastal town of Rochefort to Paris in her twenties. Big city's rhythm came to her like a flood, and Emily agreed with it. She's been engaged in her culinary activity for over seven years until discovering she no longer can maintain the kitchen's work due to becoming celiac.

Emily has been forced to leave her workplace, change her diet and deal with issues celiac disease is accompanied by. Rethinking her ration and trying to sustain nutritional balance, Emily realized hundreds of thousands of people are struggling with the same issues every day. That's how the idea of writing a clean-eating cookbook came to her. To date Emily has got three cookbooks published and is currently working on a fourth one, looking for creative ways to diversify the healthy diet.
