Prof. Edel Hencock is a professor of research and media adviser. Her primary areas of interests are researching diets and weight loss, online media, public relations, media law, and media ethics.

Apart from her regular routine job she occasionally writes about diet and weight loss articles in Star Tribune and other local papers.

Her ongoing research is on Dukan diet.
