Rudy Vidaurri

Rodolfo “Rudy” Vidaurri, a former chef and nutritionist, is the co-author of the cookbook "Amazing Mexican Cooking with Your Instant Pot" and "Low Carb Cooking with Your Instant Pot". He is a mixed martial arts trainer who is driven by wellness of the body, mind and soul. It is his mission to inspire and teach the ways of preparing and enjoying real food while instilling the discipline and philosophy of a balanced mind through physical fitness. It is his firm belief that mental stability and wellness is a direct reflection of what we eat.

Rudy is originally from Northern California. He taught himself how to cook at the age of 16 after his father passed away because his mother worked long hours. After many trial and error recipes, he eventually found that not only was he not messing the food up, but that he was being complimented on it. He soon began to cater dinner parties and worked as a personal chef before he got his professional start at a prominent 5-star restaurant in Sacramento, CA. He later attended college in Southern California and lived there for over a decade working as a chef, musician and fighter. It was there that he discovered his abilities as a cook. He made his way through a range of different restaurants including some nice ones in the Beverly Hills area and some not-so-nice ones to keep a paycheck. Through it all he worked his way up to sous chef but didn’t realize his true potential until he came back home from L.A. and reunited with his high school sweetheart, and now wife, Emily and started his real food journey. It was with her influence that he changed directions as a cook and realized that great tasting food could in fact be made with healthier, whole food ingredients.
