The particular use of wild greens and tree nuts were also evident and are of Native American influence. Soup has been considered a dish that promoted a sense of community, which involved the sharing and generosity of its members, this was clearly shown in the recorded history of colonial period.

Soup was everyone’s lifesaver during the Great Depression. To feed people with bread and hot soup, makeshift dining halls were built by charitable groups and churches starting in 1929. Within a very short time, soup kitchens sprung up across America, with most of the towns and cities serving bean soups and chicken soups. These soup kitchens were mostly ran by the Volunteers of America, while some were organized by non-profit organizations and the local government. Even the famous Al Capone started his own soup kitchen in Chicago his hometown.

Our forefathers as well as the people of today share two reasons for why they value these early dishes: nourishment and satisfaction. Furthermore, great times are shared with our loved ones while eating soups, stews and chilies, their different flavors allow us to experience other cultures and enhance our culinary knowledge and skills. Their varieties are only limited by the collective imagination of cooks all over the world, like a with rich and spicy Thai coconut soup, an aromatic smell of ginger from a bowl of broth, and a filling Louisiana gumbo.
