Whitney Lauritsen

Whitney Lauritsen has spent nearly two decades making media about food, wellness, and sustainable living.

She founded Eco-Vegan Gal in 2008 and ran it for fourteen years, building a YouTube-first brand around plant-based cooking, ingredient literacy, and living well without perfectionism. The work earned the Ed Begley Jr. Environmental Activist Award in 2014. Along the way she wrote for VegNews and was invited by Maria Shriver to contribute to the Women's Conference website.

Whitney is the author of The Vegan Ketogenic Diet Cookbook and the ebook Healthy Organic Vegan on a Budget. Her recipes come from the same place her advice does: a belief that eating well should be practical, affordable, and possible on a weeknight. She writes for people who want to eat better without turning it into a second job, and she has little patience for food rules that make cooking feel like a test you can fail.

She also hosts This Might Get Uncomfortable, a podcast about mental health, emotional wellness, and the parts of being human that are harder to talk about. Much of her work sits at that intersection, where what we eat, how we feel, and what we can actually sustain meet.

Whitney studied film production at Emerson College and works in content and creator operations, directing YouTube and podcast programs for creator-led brands. She lives in Los Angeles, where she is usually cooking, at a concert, or planning her next road trip.
