Like many of you, I love cooking outdoors. You see, while growing up, my family traveled the countryside in the family Winnebago.

We traveled all over the United States. Every summer growing up, my parents would put all of us kids into the family camper and we would hit the road for our annual two-week family vacation.

It was during this time of my life, I learned to fully appreciate how food brought the family together.

Once we arrived at the KOA, Yogi Bear campground or at an open area to camp for a few days, out came the grill and the griddle.

Over the years, this tradition has allowed me to cook with my family and friends.

I love outdoor cooking on an open fire or a Weber grill, but my favorite type of cooking is on the Blackstone flat top.

It gives me the heat and flexibility I need to cook anything I need. Plus, it gives me the space I need to be as creative as I want.

Now as a professional chef, I am able to create magnificent dishes for my customers and clients. I am able to sample any number of foods and flavor combinations all of the time.

I have access to large varieties of meats, fish, spices and produce. I am able to take my years of experience beyond my kitchen to my griddle.

In my griddle cookbooks, I wanted to share not only great tasting recipes, but recipes that are fun and enjoyable to make.

The recipes in my books are full of flavor and, I hope, after some time following the recipes, they will fill you with great memories of spending time cooking with friends, family and neighbors.
