On his urban farm, Gardens on Glen, Thomas has expanded his operations to include annual productions of: over 1,500 pounds of produce (using less than 2,000 square feet of gardening space, including small hydroponic and indoor gourmet mushroom cultivation operations); over 400 pounds of organically raised rabbit meat (in a 200 square foot, handbuilt, structure); producing over 20 gallons of homemade wine; and over 400 pounds of cold-process, handmade soap (including: laundry, dish, sensitive skin, tough skin and naturally insect repellant variations). All of this happens on less than ⅓ of an acre in the middle of one of Iowa’s Top-10 largest cities.
