Fondo' nel 1862 il Museo di Merceologia, scienza d'avanguardia per il tempo, anche a seguito di alcuni viaggi all'estero che gli permisero di studiare analoghe realta' internazionali.ÂNel 1860 da' vita ad una prima collezione presso il Collegio Monviso in corso Oporto. Chimico formatosi a Parigi presso la Manufacture des Gobelins e collaboratore di Ascanio Sobrero all'Arsenale torinese, Gian Giacomo Arnaudo…n fu scienziato poliedrico e dai molteplici interessi; nel 1851 guidò la delegazione piemontese all'Esposizione di Londra, e si convinse della necessità di svecchiare tanto il sistema formativo quanto quello economico sabaudo: diede vita all'insegnamento di merceologia presso il Reale Istituto Tecnico nel 1860, e nello stesso anno fondò il primo museo merceologico italiano, inizialmente ospitato presso il Collegio Monviso e poi trasferito nell'ex mercato comunale di Corso Palestro (1885). Il Museo, rivolto soprattutto alla formazione di una classe di tecnici per la nascente vocazione industriale cittadina, ospitava una collezione di campioni raccolta inizialmente a Parigi (in seno alla Société chimique di cui Arnaudon fu presidente) e premiata all'Esposizione Italiana (Firenze 1861).
