L'ottima salute di cui gode oggi la viticoltura di montagna in Valle d'Aosta viene da lontano: è dovuta in gran parte allo straordinario e a volte sovrumano lavoro dell'uomo che ha saputo in qualche modo strappare quel poco terreno coltivabile per la vite. Con enorme sforzo ha costruito i terrazzamenti, un'ottima soluzione per sfruttare i fianchi scoscesi della montagna. Con le pietre ha costruito i muri a secco, anche esteticamente belli, per contenere la terra che, in alcuni casi, con una fatica incredibile, ha dovuto trasportare dal piano. In altre zone, meno aspre, ha sfruttato con qualche lavoro i pendii ben esposti. Il vino: meraviglioso frutto di quattro stagioni di intenso lavoro della natura e dell'uomo che conosce la botanica della vite! Com'è noto, esso è una composizione di centinaia di reazioni da cui scaturiscono le caratteristiche del prodotto. Certo è che il vino è la più antica bevanda alcolica fermentata. Vinificavano già gli Assiri seimila anni fa e gli Egizi furono degli ottimi viticoltori. La vendemmia: sospirata conclusione di un ciclo colturale (ma anche culturale) che mantiene intatto tutto il suo fascino. Libro.
