Grundherr zu Altenthann und Weyerhaus war zunächst Schüler der Nürnberger Kunstgewerbeschule. Anschließend studierte er 1872-1878 an der Münchner Kunstakademie bei K.T. von Piloty (1826-1886) und A. Müller (1831-1901). Daneben nahm er Unterricht in Glasmalerei und Buchkunst. Grundherr entwarf Glasgemälde, Buchschmuck und Illustrationen und pflegte die Genremalerei. Auch schuf er monumentale Decken- und Wandmalereien, so Deckengemälde in der protestantischen Kirche Kleinsorheim bei Nördlingen, Wandgemälde in Schloß Wernfels und Kartons zu den Glasgemälden in den Rathäusern von Essen und München.
