A cookbook in Eleanor Roosevelt's name? Why, she didn't know a thing about cooking outside of scrambled eggs on Sunday night! True, or almost. Or, they said, Mrs. R. never cared what she ate; she was too busy working. Not true; she did care. The older she got, the more she appreciated an occasional special dish, fresh summer vegetables, well prepared seafood. It is enough, however, to know that Eleanor Roosevelt, on her own, enjoyed entertaining immensely. The kitchen was rarely haute, but the conviviality, friendship and opportunities for informal conversation with her guests were a joy to her. In her New York City home, and especially at Val-Kill, she was a marvelous hostess. Taking the lead, she nearly always insisted on serving up the main dish herself to everyone, regardless of the long hours she may have worked that day, or what evening activities lay ahead. So, this souvenir/cookbook, a production of the Eleanor Roosevelt Center at Val-Kill (ERVK), is a personal way of communicating our memories of Eleanor Roosevelt, her influence on our lives, and our increasing awareness that her spirit of kindness and concern for others, combined with hard work and a welcoming nature, are a true part of the American heritage. Val-Kill is the name given by the Roosevelts to this home. They were inspired by the lovely Fallkill Creek which flows through the 180-acre property on its course through the Town of Hyde Park to the Hudson River at Poughkeepsie. The Eleanor Roosevelt National Historic Site was established by Congress in 1977 (Public Law 95-32). The law authorized the National Park Service to enter into cooperative agreements with others to conduct studies, lectures, conferences, seminars, and other endeavors relating to the issues to which Eleanor Roosevelt devoted her intellect and concern. Such events aim to provide perspectives on contemporary problems, and should reflect both her idealism and her concern for practical applications and solutions. The Eleanor Roosevelt Center at Val-Kill, an independent, non-profit organization, accepted the responsibility to provide the kinds of programs envisioned in the law.
