RECIPES FROM THE ORIGINAL ENGLISH GASTROPUB, FOR GERMAN READERS. Tall 8vo. XII pp, 611 [i.e. 607] pp, (33), plus 12 engraved 'Bills of Fare' as well as 2 engraved plates bound as frontispieces. Bound in contemporary marbled publisher's cartonnage. Slight worming to blank lower margin repaired on a few leaves (pp. 107-119), touching a few letters; a little foxed here and there, but generally an excellent, genuine copy. Rare sole edition of this German translation (with some colorful commentary) of a celebrated cookbook brought out by the proprietors of the Crown & Anchor Tavern on the south side of the Strand. The first English edition appeared under the title The Universal Cook in 1792, and has been translated here by a German resident in London, J. F. Thölden. Unlike similar texts intended for housewives or domestic servants, The Universal Cook bears witness to professional English gastronomy as was practiced in a tavern such as the one kept by Messrs. Collingwood and Woollams, "Principal Cooks at the Crown and Anchor Tavern in the Strand". The recipes include such cultural favorites as partridge pie, hare pie, lark stew, and porcupine; as a matter of course, butter seems to be the chief seasoning for most dishes. J. F. Thölden (of whom little seems to be known) evidently arranged the present publication with some care. The plates have been re-engraved but very closely copied from the English original, curiously preserving all of the English captions but with German captions somewhat clumsily added - presumably to add to the authenticity of the production. Thölden includes a list of subscribers male and female, roughly 160 names in total demonstrating just how far afield English cuisine had penetrated into the Continent: Madam Fesicke in Halle, for example, ordered 4 copies; a Glogau bookbinder named Benjamin Gottlieb Günther ordered 8 copies; the 'Postmistress Siegerlin' in Luba? (southwest Poland) ordered a copy; and hefty orders were placed in Riga (Latvia) for 8 copies by two different subscribers, and in Leer, East Friesia (Herr Mäken ordered 50 copies!). Thölden adds his own footnotes to the text, always signed "A. d. U." "Anmerkung des Übersetzers" [annotation of the translator]. On p. 2, for example, the German reader learns that "it is implied [that the hearth] uses coal, as nothing else is burned in England". A lengthy note on pp. 11-12 explains the curious origin of the English term 'Force-meat'; a note on p. 16 suggests that 'Ketchup' is made from walnut essence and is popular in fish sauces; and on p. 510 we read of the ubiquity of sourdough in England.
