Besonders bekannt wurde er für seine erotische Kunst - Frauenakte, Szenen aus dem Pariser Nacht- und Straßenleben oder Frauen aus Freudenhäusern. Vertès illustrierte Bücher bekannter französischer Autoren und arbeitete als Kostüm- und Bühnenbildner für Theater, Ballett und Film. 1952 erhielt er zwei Oscars für die Ausstattung des Films "Moulin Rouge".
