Hardcover. Condition: Very Good. Dust Jacket Condition: Very Good. Photographs by Gozen Koshida (illustrator). 2nd Edition. States "First Printing, this edition, 2003." (Random House put out a less impressive edition in 1996.) Number line complete 1 2 3 4 5. Gozen Koshida's food photography is magnificent. Edges of dust jacket are visibly rumpled, but not torn. Initialed "CRP" (though it could be "CLP") to half title page, and this is a "live" signature -- despite glossy photo to verso, the indentation caused by the upstroke at the end of the letter "P" can be seen and felt, there on the reverse. (Author signature is in the form of the three initials, only.) Additionally, the blank page before the "Thanks & Appreciation" page has been dated 1-7-05 and filled with a warm inscription to his betrothed by a gentleman who later became a member of the Las Vegas (Nevada) City Council -- interesting, given author Palmer's entrepreneurial activities in that city. (You may want to consider writing your warm inscriptions on a separate sheet of paper, gentlemen -- books have long lifetimes.) 206 pp. including index. Reduced from $80. Signed by Author(s).

People called her a revolutionary, comparisons to Alice Waters were made. Klein created quite the stir in the culinary world by introducing a new fine dining cuisine based on raw, organic vegetarian ingredients. Roxanne's was one of the most innovative new restaurants in the San Francisco Bay Area. The restaurant's "living food" cuisine earned rave reviews from both diners and food critics. Gourmet Magazine stated, "Roxanne's is simply the most innovative restaurant of our time." Famed Bay Area critic Michael Bauer said Roxanne's offers "truly four-star dining, with a world class wine list and elegant decor." A graduate of the California Culinary Academy, her creativity with vegetarian cuisine and her broad knowledge of organic ingredients earned her respect from a variety of culinary authorities. Hardcover. Condition: Fine. Dust Jacket Condition: Fine. photography by Alex Farnum (illustrator). First Edition. grey cloth, 342 pages : color illustrations, CONTENTS: The charcutier's pantry -- Provisioning the larder -- In the butcher shop -- Skewered, rolled, tied & stuffed -- Sausage, salami & their cousins -- Pa^te´s: potted meats, terrines & loaves -- Brined, cured & smoked -- Accoutrements. "A definitive resource for the modern meat lover, with 125 recipes and fully-illustrated step-by-step instructions for making brined, smoked, cured, skewered, braised, rolled, tied, and stuffed meats at home; plus a guide to sourcing, butchering, and cooking with the finest cuts. Although the tradition of preserving meats--known as "charcuterie" in French, "salumi" in Italian--is one of the oldest of all the food arts, the craft charcuterie movement has nevertheless captured the modern imagination, with scores of charcuteries and salumerias opening across the country in recent years. Perhaps no charcuterie is as well-loved and regarded as the San Francisco Bay Area's Fatted Calf. With In the Charcuterie, co-owners and founders Taylor Boetticher and Toponia Miller make a wide array of meat products accessible to the home cook--from potted meats to roasts to sausages to confits (and everything in between). With more than 250 full-color photographs, this instructive and inspiring tome is a comprehensive resource for anyone fascinated by the art of preserving meat"--.
