Klassisch, un-trendy und unheimlich nützlich. Man kann auch schwierigere Sachen lernen, wie z.B. das Entbeinen eines ganzen Huhns für das Pollo Intero. Und wenn man DAS kann, traut man sich in Zukunft auch an andere Sachen ran. Zudem hat sich jedes Mal die Arbeit wirklich gelohnt. Mein Freund mußte aber auch die harte Lektion lernen, daß man Rezepte GANZ lesen sollte, bevor man mit dem Kochen beginntes ist definitiv ein gründliches Buch, ohne Bilder, mit Zeichnungen, die auf den ersten Blick nicht so toll sind, beim Kochen dann aber "Sinn" machen - mehr als so manches gestylte Bild, das mit dem intendierten Ergebnis letztlich wenig zu tun hat. Solche Photos helfen einem nicht, im Gegenteil. Fazit: buy this book! 450 Rezepte präsentiert Marcella Hazan - alles leicht nachzukochende Rezepte ohne Firlefanz. Zurück zu den Wurzeln heisst es hier. Die Gerichte sind von verblüffender Schlichtheit - und gerade deshalb so wunderbar. Die einzelnen Zutaten kommen herrlich zur Geltung, da wird nichts zugedeckt oder überpflastert. Und wer einmal das Brathuhn mit Zitrone (S. 327) versucht hat, wird bestätigen: Dieses Buch ist ein Meisterwerk! Vorab: wer ein hübsch mit Fotos bebildertes Kochbuch sucht ist hier fehl am Platz. Wer aber ein wirklich umfassendes, gut beschriebenes und sehr ausführliches Standardwerk für die Italienische Küche sucht, für den ist dieses Buch genau das Richtige. Wir sind begeistert: von Pasta, Fleisch, Meeresfrüchten, Vor- und Nachspeisen findet man hier alles. Besonders gut gefallen uns die vielen "Insidertips" der Autorin, z.B. welche Dosentomaten (jawohl, Dosentomaten!)die besten sind und warum man für Pastasaucen besser eben diese und keine frischen Tomaten nehmen sollte, u.v.m Sehr einfache und schmackhafte Rezepte! Zu empfehlen! Ich kaufe gerne ein was mir gefällt und suche anschließend passende Rezepte. Dieses Buch von Marcella Hazan gewinnt dabei immer wieder das Rennen. Die Rezepte sind sehr reduziert von der Anzahl der Zutaten je Rezept. Sie hat einen sehr schlichten, treffenden Stil. Dabei kann man viel verallgemeinern, wenn man sich erstmal durch eine Reihe ihrer phantastischen Rezepte gekocht hat. Sie geht sehr streng mit Abweichungen ins Gericht. Oft gibt es keine "hinreichend gute Alternative" zu einer genannten Zutat. Das mag man gut oder schlecht finden. In meinen Augen gibt es eine stringente Basis für gute italienische Küche. Abweichen erlaubt, aber man kennt das Terrain. Müsste ich zwischen all meinen Kochbüchern wählen, ich würde mich für dieses entscheiden. Marcella Hazan hat mit diesem Buch für die italienische Küche geschafft, was Julie Sahni für die Indische oder Shizuo Tsuji für die Japanische geschafft haben. Ein großes, umfassendes Basiswerk. Alle weiteren Bücher von Marcella Hazan können ergänzen aber nicht ersetzen. Wer gerne auf der Jagd nach frischen Zutaten ist, ist neben diesem Buch evtl. für weitere Ideen mit dem Silbernen Löffel gut beraten. Die weitern Bücher von Marcella Hazan kann ich nur dem Fan ihrer Rezepte empfehlen. endlich, nein, man braucht kein goetterkoch zu sein, ja, man fuehlt sich ruck zuck wie eine italienische mama wenn man die nudel walkt. vom tip zum richtigen mehl ueber den unsinn auch in der nebensaison frische tomaten zu kaufen - bis zu einer bauanleitung zu einem preiswerten italienischen nudelholz - alles da was das herz begehrt! jetzt weis ich nur noch nicht wo soll das buch seinen dauerplatz bekommen ? auf dem nachtschrank, in der kueche oder neben dem telefon ? Alles, was das Herz begehrt- massenhaft Pastasaucen, wertvolle Tips zur Nudelherstellung, ehrliche Kommentare zur Frage der Dosen- oder Frischtomaten- alles ist drin, alles schmeckt. Genial ist, dass viele Gerichte mit so wenigen Zutaten auskommen, dass ich gar nicht glauben konnte, dass es funktioniert- das einzige, was der Koch braucht, ist ein wenig Zeit. Kaufen! Auch ohne viel bilderschnickschnack ein tolles buch! Ich hätte nicht geglaubt, dass ich auf Amazon mal ein Kochbuch rezensieren würde. Genauso wenig hätte ich mir träumen lassen, dass dieses Buch meine Kochgewohnheiten so beeinflussen würde. Das liegt zum einen an den tollen, leckeren Rezepten - das bieten aber andere Kochbücher auch. Bei Hazan gibt es aber noch andere Aspekte: - Es fängt die italienische Esskultur wunderbar ein, tw. auch mit Anekdoten. Bei manchen Rezepten bekommt man alleine deshalb Lust, sie auszuprobieren. Sie schreibt total unpretentiös, macht kein "Geschiss" oder "Kult" um modische Gags oder trendige Speisen. Umgekehrt huldigt sie auch nicht der "heiligen Tradition", sie stellt auch Gewohnheiten und vermeindliche Kochgesetze in Frage. - Umheimlich weites Spektrum der Speisen, von sehr einfachen bis zu ungewöhnlichen Gerichten, ohne letztere künstlich zu erzeigen. - Sie schlägt häufig Variationen vor, sei es als Animation für Experimente oder aus dem Verdacht heraus, das.
