In this memoir, Roland Mesnier, pastry chef to five presidents, recalls the stunning desserts he created for White House State Dinners, formal events, and family celebrations. Roland Mesnier (July 8, 1944 - August 26, 2022) was a French-born American pastry chef and culinary writer. His creations during his twenty-five years as Executive Pastry Chef (1980-2004) at the White House earned him the reputation of a creative genius. He first became interested in becoming a chef when he visited his brother's pastry shop. When he was fourteen, his mother secured an apprenticeship for him at a pastry shop in Besançon. At 17 he passed his apprenticeship exam and began to look for work that would enhance both his skills and his reputation. Mesnier lived in Hamburg and Hanover and learned marzipan modeling along with how to make cakes, cookies, and fondants, as well as the German and English languages. Mesnier was hired as White House pastry chef in 1979 by First Lady Rosalynn Carter. "My role in the White House," Mr. Mesnier once told a reporter, was "to put a smile on the face of the first family." Gary Walters, Formerly the White House Chief Usher, was responsible for the effective operation of the Executive Residence at the White House as the home of the President, site of Official and Ceremonial activities of the Presidency, and a museum of our American history. He developed and administered the budget for the operation, maintenance, and utilities and supervised the Executive Residence staff. Mr. Walters has served as Chief Usher since being appointed by President Reagan in 1986. He served as Assistant Usher from 1976-1986 after initially being appointed by President Ford. Mr. Walters was member of the Executive Protective Service (Uniformed Division), United States Secret Service from 1970-1975. He is a graduate of the University of Maryland and served from 1970-1975 in the United States Army.Mesnier performed his role for twenty-seven years, between 1977 and 2004, under the presidencies of Jimmy Carter, Ronald Reagan, Bill Clinton and both Bushes, and the book gives a modern and close-up look at this ancient and curiously unchanged practice of articulating power through sugar. Mesnier's more detailed account of the work makes us aware that patisserie is a dangerous branch of cookery, as well as one requiring an extraordinary range of skills, among them carpentry, glass-blowing, painting and sculpting, as well as a capacity for technological invention. Mesnier devised many of his own tools, for example making use, with delicious irony, of a dental tool to sculpt sugar orchid petals. The pastry chef must work with the sharpest knives to cut the brittle, potentially lacerating, hardened sugar and must have the daring to manage sugar in its molten form.
