Cet ouvrage, témoin d'une époque fastueuse, traite à la fois des desserts quotidiens et des entremets prestigieux. Remarquable par le nombre des recettes et leur détail - précurseur en la matière, Gouffé s'est attaché à donner les quantités et les durées de cuisson -, ce livre a marqué un tournant important dans l'évolution de l'art pâtissier et fut utilisé par de nombreuses générations. Jules Gouffé a été l'élève d'Antonin Carême qui l'a formé et a fait de lui une célébrité de l'époque. En 1840, il s'établit Faubourg Saint Honoré et sa maison devient une des meilleures de Paris. En 1867, il devient chef de bouche du Jockey Club de Paris. C'est à ce moment là qu'il commence son « Livre de Cuisine ». En 1872, il fait paraître « Le livre de pâtisserie » et « Le livre des conserves », en 1875 « Le livre des soupes et des potages ». Celui qu'on a surnommé "l'apôtre de la cuisine décorative" meurt à Paris en 1877. Très belle réimpression sur l'originale de 1873 avec toutes les chromolithographies en couleur.

Qualche piccola macchiolina di foxing in una decina delle prime carte ed in una quarantina delle ultime, mai fastidiose o intense, assai minori di quelle solitamente presenti nell'opera a causa della qualità della carta utilizzata per la stampa. Tagli spruzzati in rosso. Nel complesso, esemplare in buone-ottime condizioni di conservazione. L'opera presenta anche 137 bellissime incisioni in acciaio nel testo, riproducenti magnifici dolci ed alcune, strumenti utili nella preparazione dei dolci tutte basate su disegni originali di Ronjat. Le tavole in cromolitografia illustrano, in magnifici colori, torte, manicaretti, pagnotte dolci ecc. Prima edizione di questa celebre opera di alta pasticceria scritta dal rinomato chef e pasticcere francese, Jules Gouffé (1807 28 febbraio 1877) che per le sue straordinarie composizioni gastronomiche, venne chiamato "l'apôtre de la cuisine décorative". Gouffé ebbe un enorme impatto sulla gastronomia francese e questa sua opera, fu d'ispirazione ad un'intera generazione di pasticceri e chef e la sua lezione è ancora viva oggi, grazie all'apprezzamento di diversi celebri chef contemporanei come Bernard Loiseau e Hervé This. L'autore si formò nella bottega del padre che possedeva una rinomata pasticceria in via Neuve Saint-Merri, a Parigi. Divenuto allievo di Antonin Carême all'età di soli 16 anni, rimase con lui per sette anni. Narra la leggenda, riportata la prima volta proprio in quest'opera da noi proposta che Gouffé che Carême, di passaggio, si fermò ad ammirare le "pièces montées" che erano in mostra, congratulandosi con il proprietario e offrendosi di prendere suo figlio sotto la sua protezione. Il suo primo lavoro fu durante un ballo tenuto nel 1823 dalla città di Parigi, in onore del duca d'Angoulême ottenendo un grande apprezzamento. Nel 1840 aprì un negozio rue du Faubourg Saint-Honoré che presto divenne uno dei più famosi di Francia e che cedette poi nel 1855. Nel 1867 accettò l'offerta di Alexandre Dumas e del barone Brisse, che già da tempo glielo chiedevano, di diventare chef de bouche del Jockey-Club de Paris. E' proprio quando iniziò questo lavoro che gli venne l'idea e la voglia di iniziare a scrivere libri sulla pasticceria, in modo di tramandare ai posteri le sue conoscenze e le sue idee. Rif. The work is divided into two parts, the first on the preparation of materials, the second on the construction of large pieces and separate entremets. The label to the front pastedown is that of Féret et fils, a famous publishing house and bookshop in Bordeaux best known for the directory Bordeaux et ses vins (1850, also known as the Guide Féret), to date considered the most comprehensive information source on Bordeaux' wineries. While the bookshop closed in 1983 the firm continues to publish under the name Féret. Bitting, pp. 195-6; Cagle 219; Vicaire 418. Large quarto. Original dark green cloth, spine and front board lettered in gilt, blind double rule border to covers, yellow endpapers. Spine ends and corners bumped, tiny patch of wear to rear joint, book block fore edge foxed, contents sporadically so, but overwhelmingly fresh and clean, some minor expert paper repair to front pastedown and facing free endpaper, tiny nick to lower edge of pp. 329-30. A very good copy.
